Parmesan Garlic Crumbed Fish
Crunchy parmesan and garlic breadcrumb-coated fish ready in just over 10 minutes.
Packed generously with a thick, crunchy coating of parmesan and garlic breadcrumbs, this is one fish that everyone is sure to love.
Ingredients
Fish
- 2 firm white fish fillets (about 5 oz/150g each, skin off)
- 2 tablespoons dijon mustard (or mayo)
- Olive oil spray
- Salt and pepper
Crumb Topping
- 1/2 cup panko breadcrumbs
- 1 tablespoon parsley (finely chopped)
- 1/3 cup parmesan (finely grated)
- 1 clove garlic (minced)
- 1 tablespoon olive oil
- Pinch of salt
Instructions
Preheat grill/broiler on high.
Mix all crumb ingredients together thoroughly.
Season fish with salt and pepper. Spread mustard on top side only.
Press mustard side firmly into crumb mixture. Spray with oil.
Drizzle 1/2 tablespoon oil in an oven-safe skillet and preheat on stove over high heat.
Place fillets in hot pan, then broil 5-6 minutes until golden and cooked through.
Serve immediately with lemon wedges.
Notes
Alternative method: Bake at 220C/390F for 10-12 minutes, then broil briefly to crisp the top.
